Soups are an important part of Czech cuisine, and almost all meals begin with a soup. “Dripping” is a term for a mixture of eggs, water, flour, and salt that is drizzled into the boiling soup a couple of minutes before it’s finished cooking. It creates a unique fluffy texture and contributes greatly to the flavor of the dish.

Rice Pudding With Fruit

Rýžový nákyp is a traditional Czech/Slovak rice pudding often served as the main course. The porridge is layered with preserved fruits, often plums or apricots, and baked in a water bath until golden brown on top. It is then served with the preserved fruit juice poured over the top. It is not uncommon to see this sweet, warm and comforting food as the main course on the dinner table.

This bread based, fruit filled and sweet dish is a great way to use basic cupboard ingredients. It’s the Czech version of Britain’s’ bread and butter pudding. Unlike Britain’s desert, this food is often served as part of the main meal. The most important ingredients are stale or day old bread, raisins, cottage cheese, brown sugar apple slices, and some spices. It’s best eaten hot and tastes like a sweet apple pie.
